Christmas morning breakfast wouldn't be complete without Eggnog Coffee Cake.
Cups of brown sugar and eggnog set this dish's flavor and create a wonderful spice blend with an unmistakable crunch.
And when I mean crunch, I'm talking about the streusel topping.
Specks of cinnamon and granulated sugar resemble fine sand when mixed together.
Helping to make this coffee cake stand out even more as a sparkly garnish.
Plus, the vanilla extract creamed alongside the eggs and cold butter leaves you wanting to lick the bowl clean.
But please refrain from diving headfirst (or at least do it away from prying eyes).

HOW TO PREPARE THE STREUSEL TOPPING
First, you'll need to have the following ingredients on hand:
- ½ cup sugar
- ½ cup flour
- ¼ cup butter
- 1 ½ tsp cinnamon
Making the streusel topping is very easy!
In a separate bowl, combine the cinnamon, sugar, and flour together until it resembles fine sand. Next, add in the butter and mix well until fully blended.
Now take the mix and sprinkle it all over the coffee cake.
HOW TO MAKE EGGNOG DRIZZLE
If you'd like to whip up a drizzle with your remaining eggnog and give this Eggnog Coffee Cake serious whip appeal, then take a measuring cup and add ¾ cup confectioners' sugar or powdered sugar inside. Set aside. Next, in a microwave-safe cup, warm-up ¼ cup of eggnog for approximately 30 seconds. The heat from the eggnog will help dissolve the powdered sugar into a smooth glaze but be careful not to make the eggnog too hot!
Once the eggnog is ready, pour in a tablespoon of liquid into the measuring cup at a time and whisk until blended. You will see your powder become liquified and then thicken into a cream. Now, the more eggnog you add to the powdered sugar, the thinner the result.
After reaching your desired texture, pour on top of your coffee cake and allow to cool and set.
TIPS FOR MAKING EGGNOG COFFEE CAKE
- Remember, eggnog packs a punch when it comes to flavor! So unless it's a personal preference, I wouldn't add any additional cinnamon or nutmeg to the mix.
- You can vary this eggnog coffee cake slightly by adding in a half-cup of blueberries and a half of chopped walnuts. This will get it extra flavor and turn this holiday favorite into a regular treat.
CAN YOU ADD FRUIT TO COFFEE CAKE?
Absolutely! If you'd like to add fruit to this eggnog coffee cake, consider blueberries, raspberries, or strawberries the best blending options. When preparing your batter, you can incorporate the fruit after adding in the eggnog. I prefer to take half my fruit and blend it down to a syrup to incorporate the fruit flavor.
If you would like to add a simple fruit layer, then place the fruit atop your batter before putting it into the oven to bake.
HOW TO FREEZE COFFEE CAKE
The best way to freeze coffee cake is to create slices and individually wrap them in saran wrap. This makes the re-heating easier because you don't have to fight with a frozen brick! Place the individually wrapped slices in an air-tight container or freezer bag and store them on the bottom rack. This eggnog coffee cake can last in the freezer for approximately four (4) months and would be a nice treat to bring in the spring season!
